Making requests at a restaurant can be a dicey thing to attempt. A request that requires multiple ingredients from multiple dishes/stations might get turned down because it hampers the machine-like functionality of the kitchen's line operations. That said, as long as your request is within reason, restaurants are usually happy to oblige.

Every so often, however, you'll find a restaurant and/or a particular staff member who doesn't just merely accommodate a request - they go the extra mile to give you EXACTLY what you want.
